Potatoes

If cold, mayonnaise soaked potato doesn't do it for you, then maybe this will work.  German potato is a hot dish with bacon flavoring and a weird spin on sweet and sour?  Anyway, sugar and vinegar dressing on warm potatoes and onions.  Most recently, snuck in some grilled asparagus, salami bits and chopped hard boiled eggs.  Worked. Depending upon how much bacon is used, this may be a slightly lower calorie alternative to the usual mayonnaise version.

Cooking Russet Potatoes in the Instant Pot hydrates the starch granules way more than simple boiling. The resulting potatoes don't need much to turn them into mashed potatoes. Really, the additions are more for flavoring than thinning and smoothing. This recipe from Salty Marshmellow is the general method, though the sour cream is never added and usually not that much butter, either. Because the cooking liquid is driven into the potatoes, seasoning the cooking water can give it a boost.

Great results without any deep frying nonsense. They freeze well, which is great news for when those 10 lb bags of potatoes are on sale and manage to make their way home. This recipe is intended for the Ninja Max air fryer and would most likely need adjusting for other air fryers.
