"Sorta" Shimla Paneer

There is a restaurant we used to go to a lot and my favorite dish there was their Shimla Paneer.  I've tried a lot of online, authentic Indian recipes and none have been exactly what I'm looking for.  So I've poked around a bit to see what I could come up with.  The result is not at all authentic, but I like it and that's what I'm looking for.  Here it is:

In a pan, saute:

  • ~ 450 gm of bell pepper, red preferred, cut into 1/4 to 1/2" wide strips (approx 2 large).
  •  150 - 200 gm of yellow onion
  • 2 T of neutral flavored oil (used Avocado oil)

Until onions become translucent and the peppers are still slightly crunchy.

Add in:

  • ~100-150 gm of cubed paneer chesse  and
  • 1-2 tsp of Garam Marsala spice mix 

and cook another 1-2 min to give the cheese time to get heated through

Then add:

  • ~ 175 gm of tomato catsup (used Hunts) 

stir and cook until the catsup is heated through and the flavors have had a chance to meld together.

Gradually add in:

  •  salt 

with stirring until the taste is to your liking.  Getting the salt content right seems to be a key to making this turn out best.

Simple recipe that tastes better than it reads.  Pair with brown rice and some of that Apple/raisin chutney and it's a meal.
